Tyler Dabestani and Nicholas Kiraly founded Necessary Purveyor as a gourmet sandwich shop and market in Miami’s the Lincoln Eatery food hall in 2019. Half a decade later, they are expanding to Atlanta with a full-service restaurant and market with a cocktail bar, soft-serve counter, deli, raw bar, barista, grocery, and more. It’s set to open on the ground floor of Scout Living—a 400-person building with fully furnished units and flexible leases—this winter.

“Atlanta really ties into the mentality of the brand with its southern roots,” Dabestani says. “We represent local, small batch, and regional purveyors with a southern hospitality element.”

He describes the vibe as “farmhouse meets BOHO meets Dean andamp; Deluca” with plenty of wood. The hope is residents and visitors alike will stop in to grab artisan pantry items like jams and honeys, stay for a glass of wine, or set up their laptop with lunch and a pastry. Customers can help themselves to grab-and-go items, order at the counter, or sit down and enjoy table service.

For breakfast, expect whipped ricotta toast, buttermilk pancakes, a ham and gruyere omelet, and steel-cut oatmeal. For lunch, there will be salads made to order as well as the sandwiches Necessary Purveyor earned its stripes for—think crispy eggplant with mozzarella, cherry peppers, arugula, and balsamic, pastrami with Jarlsberg Swiss and sauerkraut on rye, and a turkey-bacon-goat cheese club. Prepackaged items may include tabouli, chicken salad, pesto bowtie pasta salad, juices, and wellness shots. Those looking for an elevated experience can enjoy a seafood tower, lobster roll, and sardine plate, as well as a smash burger and smoked wings. There will be take-and-bake dinners, chef-driven sides, and ice cream in flavors like local honey vanilla, pistachio and Stracciatella, and cookie crumble.

“We want people to come find something different every day,” Dabestani says. “I grew up going to Dean andamp; Deluca and really cool markets in Europe and the U.S. We approach a southern mercantile vibe with a fine dining mentality.”

Customers are welcome to grab a bottle of wine from the market (all less than $40) and consume it onsite. For those who just want a glass, select New World natural options will be available from the bar, along with beer on tap. Eight to 10 rotating cocktails will offer spins on classics, such as a negroni and espresso martini.

The Miami location of Necessary Purveyor is currently closed, but Dabestani says two new locations are in the works. Both will be expanded versions of the original concept, similar to the plans for Atlanta. “It’s always been our vision to grow and evolve,” he explains.
